Lots of Apple Loaf

I love apples (I believe I’ve made that rather clear throughout this blog :)). It’s almost as if I am a dog hearing “treat” anytime the word apple is mentioned! And I most certainly cannot resist a recipe with them included. This recipe in particular is about 85% apples, so you can imagine my delight at the thought of it. It is very similar to the “Invisible Apple Cake” recipes I have seen before, although it has an additional streusel topping that makes it somewhat resemblant of pie. I don’t quite know how to describe it now that I sit and attempt to… but I do know that I find it to be one of my dearest recipes.

What You Will Need

  • 4 medium/large apples
  • All-Purpose Flour
  • Coconut Sugar
  • Baking Powder
  • Cinnamon
  • Salt
  • Unsweetened Almondmilk
  • 2 Eggs
  • Vanilla Extract
  • Butter (1 1/2 teaspoons)

Tips on How to Make This “Loaf”

Cutting the Apples: I like to just slice them as this as I can, I don’t find it necessary to use a mandolin but you certainly can if you find that easier!

What Kind of Apples: I typically use either fuji apples or pink lady apples when baking, however that is just because that’s what I tend to have on hand. Any apples should do!

Mixing the Batter & Apples: It may seem a little daunting to mix the batter with the large pile of sliced apples, but it is really not too hard if you use a big enough bowl. Just gently fold the apples into the batter until it begins to distribute amongst them

In the Pan: Once you pour the apple and batter mixture into the prepared pan, it is important to make the apple to batter ratio as even as possible across the entire dish in order to prevent one area from being too heavy on the apple and another too heavy on the batter!

Sweetness: If you tend to like baked goods a bit sweeter, feel free to add a little more sugar into the batter; perhaps use 1/2 cup of sugar.

When is it done?: This “loaf” can be a tad challenging to decide if it is finished baking, however my best recommendation is to use a cake tester or a toothpick. If the tester comes out clean, it should be done. If the tester comes out with wet or clumpy dough on it, it needs a bit longer in the oven!

Ingredients

  • Apples & Batter
  • 4 medium apples, peeled

  • 1 cup all purpose flour

  • 1/3 cup coconut sugar

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1 cup unsweetened almond milk

  • 2 eggs

  • 1 teaspoon vanilla extract

  • Streusel
  • 1/3 cup all purpose flour

  • 1 1/2 tablespoons coconut sugar

  • 1 1/2 tablespoons unsalted butter, chilled

Instructions

  • Preheat the oven to 350 degrees and line an 8 x 8 baking pan with parchment paper.
  • Start by prepping the the apples: wash, peel, and slice 4 apples as thinly as possible.
  • Once the apples are prepped, combine flour, coconut sugar, baking powder, cinnamon, and salt in a large bowl. Mix the contents together then add in the milk, eggs, and vanilla. Mix it all together until well combined (the mixture should be fairly thin in consistency).
  • Add the apples into the batter mixture (it will look like it is too many apples, but it isn’t, don’t fret!). Fold the batter and apples into each other using a small spatula until all of the apples seem to be evenly coated.
  • Now, pour the apple mixture into the pan prepared with parchment paper and spread it evenly to ensure the apples and batter are evenly distributed amongst the pan.
  • Making the streusel: In a small bowl, combine the 1/3 cup flour and 1 1/2 tablespoon sugar together. Dice the chilled butter into small cubes, then add it into the bowl. Using your fingers, work the butter into the mixture by rubbing it in with your fingertips. The mixture should resemble wet sand when finished.
  • Sprinkle the streusel mixture evenly over the apple mixture, then place the pan into the oven.
  • Bake at 350 degrees for 35-40 minutes, until a toothpick comes out clean! (let sit for 15-20 minutes to cool before slicing)
